Pig slaughter
The pigs come from the holding pens to the stunning area.
There are two types of stunning, electric or with carbon dioxide, the choice of this method depends, among other factors, on the production and quality to be achieved. The animal is then slaughtered and raised to the bleeding area.
Prior to scalding, the animal is washed, afterwards it is eaclde and depilated. Optimal waxing depends fundamentally on a good scald.
After the depilation process is finished, the animal is hoisted to the slaughter area, in this phase the drying, scorching, refining, gutting and cornering are carried out.
Once the slaughter works are concluded, the carcasses go to the airing chambers, conservation or cutting room.
